Spicy, Savory, Maui-style Chicken

Maybe it’s because I love exotic locales. Or maybe it’s because I barely passed science. But for whatever reason I’m fascinated by spice rubs. To me they represent years of tinkering, experimenting and tasting until the perfect formulation is reached.

I picked up this little baby in Maui and it has brought new meaning to the word chicken in my household. Just mix a tablespoon of this magic plus two cloves chopped garlic and 1/4 cup olive oil, let marinade a few hours and pop on the grill. Sweet, savory, moist chicken is that close.

    I’m often in the kitchen but I almost always leave the meat up to my boyfriend. I have a fear of over cooking it and having to serve terrible dry meat.

    But that spice rub and your suggestion makes me want to get in the kitchen and make some chicken :)

  3. Hi Stephanie – Have you tried grilling on a cast iron grill pan? They’re cheap, easy to find, and make indoor grilling super easy. I also use kosher or organic chicken, which seems to render a juicier dish. Total confession – I cannot grill outdoors at all! I tried a few months back but haven’t mustered up the energy to attempt it again. Maybe the grill pan will work for you too!

    We just got back from Maui-had a great trip. I was able to find this spice rub, and can’t wait to try it. The label is so pretty, I would have bought just for that.
